The continuous screw cooker for products in pieces has a production capacity of approx. 1,500–2,000 kg/h based on the initial and final conditions of the processed product. It consists of a receiving hopper with an extraction screw, a double-walled U-shaped body with a central screw for product advancement, and a final screw for extracting the cooked product. Product cooking, including any of its own liquid, occurs via direct and indirect steam heating through an inverter-controlled screw; a second inverter allows for cooking time adjustment. At the end of the machine, there is an additional screw for extracting the cooked product, while the cooking liquid flows out through the overflow pipe and can be sent to a liquid treatment plant.
The PLC allows for the setting and control of various temperatures, screw speed variation, recipe settings, and an optional final automatic washing phase for the machinery.
